Overnight Oats
This is a really simple breakfast option for newborn mums and time poor mums to be as you can prepare this the night before. It is an inexpensive, delicious and simple way to ensure you are nourishing yourself in pregnancy and postpartum. It can be prepared the night before, only takes a few minutes to prepare and because it does not need to be eaten warm, you can snack on it when you are on the run or while breastfeeding. It also does not require fresh ingredients so if you run out of fresh fruit you can just use frozen berries and then whatever you have in your larder.
Ingredients:
1/2 cup oats
1 tsp chia
1 tsp flaxseeds
1 cup nut milk of choice
Optional toppings
1 heaped tbsp coconut yogurt
1 handful fresh fruit of choice (or frozen berries)
A sprinkle of nuts / seeds
Fun Fact: Beta-glucan is found in oats: Beta-glucan is a type of fiber that’s thought to raise the levels of the breastfeeding hormone prolactin. Higher prolactin levels can have a positive effect on breast milk production.
